Watermelon Slushie

It’s been beastly hot here the past couple of weeks. Thankfully, this week is a bit cooler for us. I’ve been trying to keep the fridge and freezer stocked with cool treats to help us beat the summer heat. A friend shared on her Instagram page a quick recipe idea for a watermelon slushie, consisting of frozen watermelon chunks, lemonade, and a little ice, all blended up. It looked amazing, so I decided to give it a try using Leaf & Love Organic Lemonade, making it also a low carb treat for C. I made enough for the whole family, and everyone asked for seconds. It was a major hit, and is so easy- the perfect treat for a hot summer day!

Instructions

  1. Freeze watermelon chunks for a few hours.
  2. Add frozen watermelon, lemonade, and ice cubes to a blender, and blend until smooth.

Sleek Treat Monthly Subscription Box Review #2

A couple of months ago, I shared our review of our first Sleek Treat box (you can see that here). For those that missed that post, Sleek Treat is a monthly subscription service, that sends you a box each month with 5-8 handpicked sugar-free gourmet treats to satisfy your sweet cravings.

When you sign up for Sleek Treat, every month you will receive a box of sugar-free hand-curated confections that they have scoured the world for. They even taste-test products to make sure you love your box! I think this is especially important, because believe me, we have tried many products over the years that are diabetic-friendly, but that does not mean they all taste good. Having someone else do the sampling for you is so nice, because then you are not wasting your money on products you don’t enjoy.

Inside each Sleek Treat box, you can expect a mixture of sugar-free chocolates, cookies, hard candies, jellies & more unique finds. Every box will have new and exciting flavors and will always feature a variety of snacks.

Each box also includes an insert detailing nutritional information, and additional information about each product.

C has really come to enjoy getting his box, and can’t wait to discover what goodies it will contain! Here is what was inside our second box:

La Nouba Belgian Sugarless Treats Marshmallows- The marshmallows are pink and white (but taste like vanilla) and have a soft, smooth texture. They are all-natural, low carb, fat free, sugar-free, and do not contain additives, preservatives, or waxes. To be very honest, I thought these were too good to be true, but C said they were really good and tasted just like a normal marshmallow!

Lily’s 70% Extra Dark Chocolate Bar- This chocolate bar is vegan, Non-GMO, gluten-free, sugar-free (stevia sweetened), and has 25% fewer calories than other 70% cocoa dark chocolate. As I have mentioned before, C is more of a milk chocolate guy- dark chocolate isn’t his favorite. In general though, he really enjoys Lily’s chocolate and he said that this had the same great creamy texture you can expect from Lily’s chocolate. He just prefers milk chocolate. However, if you enjoy dark chocolate, I’m sure you would enjoy this!

Purelove Caramel Coconut Cream Cups These Caramel Coconut Cream Cups are Non-GMO, organic, gluten-free, contain 0 grams of sugar, are sugar alcohol free, and soy free. They are sweetened with stevia. The cups have a 70% dark chocolate exterior and a contrasting sweet coconut-flavored filling. To be real honest C wasn’t a huge fan of these. He likes coconut, but these were a bit too coconut-y, in his opinion. I had to agree. They weren’t terrible by any means, just not our favorite item from the box.

Doctor’s CarbRite Diet Raspberry Chocolate Truffle Bar- If you have followed my blog long, it is no secret that C loves a good protein bar. This bar was no different. These bars do have a different texture than some protein bars, which some might mind, but C didn’t seem to. He also was surprised to learn it was raspberry flavored, as he said it didn’t taste very much like raspberry. The bar is gluten-free, high in protein, under 200 calories, has 2 grams net impact carbs, and contains no artificial sweeteners, no trans fat, and no preservatives.

Pandora’s Pops- These pops are vegan, gluten-free, organic, GMO-Free, soy free, nut free, and sugar-free. Pandora Pops are handcrafted in California by holistic health artisans. These pops have only 6 ingredients- essential oils being 2 of them. C enjoyed this pop a lot and laughed at how long it took him to finish it. It felt like he was sucking on it for an hour.

GoLightly Sugar Free Hard Candy Tropical Fruit Mix- These little candies were probably C’s favorite thing from the box. He would have eaten them all in one sitting had I let him. They are sugar-free and come in great flavors like peach mango, strawberry kiwi, passion fruit and pina colada.

To summarize, we were yet again super pleased with the contents of our box! As we were with our first box, we were exposed to many new products we hadn’t heard of previously, and it is so great to have a growing arsenal of snacks and treats for C that are diabetic-friendly!

Hi-FiBar Pumpkin Spice Orange Granola- Hi-FiBar is a diabetic-friendly snack that is made with all natural ingredients, has zero added sugar, has high fiber, and is low carb. We got to try out their tasty Pumpkin Spice Orange Granola and it was fantastic! C is a big pumpkin fan, so he really enjoyed this. The granola is great on it’s own, but it can also be used as a topping for yogurt, etc. Hi-FiBar also has diabetic-friendly granola bars.

thinkThin Cookies & Cream High Protein Bar- These gluten-free bars contain 20 grams of protein, 0 grams of sugar and are certified low glycemic. The Cookies & Cream flavor was a huge hit with C! I love to give him protein bars before he heads to soccer practice, etc., as the high protein seems to help stabilize his blood sugar before engaging in physical activity. C gave this bar two thumbs up!

ChocoRite Chocolate Crispy Caramel Candy Bar- We already knew that C loved ChocoRite’s products because we have tried them before, but he had never tried this particular flavor. It didn’t disappoint! The rich caramel and creamy milk chocolate paired perfectly for a sweet treat. ChocoRite Candy Bars are low carb, low calorie, gluten-free, low sugar, chewy, candy bars sweetened with erythritol, containing low net carbs.

Xyloburst Xylitol Orange Citrus Fruit Sours- Lately, C has really been in to small mint-like candies he can periodically suck on. So these Xyloburst Fruit Sours were right up his alley! They are all-natural, low carb, non-GMO, gluten-free and sugar-free. They also come in grape, watermelon, and cherry.

Xyloburst Assorted Fruit Lollipops- What kids don’t love lollipops?! We usually try to steer clear of them if we can help it, because regular lollipops are almost a sure way to spike blood sugar. That’s why I am so glad we got to try these Xyloburst Assorted Fruit Lollipops, which are the perfect swap for sugary treats. They come in apple, orange, raspberry and strawberry. They are also all-natural and sugar-free.

Coco Polo 70% Dark Chocolate Cocoa Nibs- We had never tried Coco Polo Chocolate before so we were really excited to do so!  C prefers milk chocolate, but he did still like this. I also prefer milk chocolate, but was pleasantly surprised with how yummy this was! Coco Polo Chocolate is vegan, non-GMO, gluten-free, all-natural, sugar-free, and sweetened with stevia. It is also packed with beneficial vitamins, minerals, and antioxidants. Refining chocolate produces small pieces of pure raw cocoa called nibs. They are included this bar for an intense cocoa experience along with crunchy texture.

TruChocolate Dark Chocolate Wafers- C really loved this chocolate! Made from only the finest organic non-GMO fair trade cocoa, blended with healthy ingredients, Tru Chocolate is packed with acai powder, citrus and green tea extract. I really loved the little individual packages. The perfect treat to be packed with a lunch, etc.!

To summarize, we were super pleased with the contents of our box! We were exposed to many new products we hadn’t heard of previously. I would definitely order these products again, and it is so great to have a growing arsenal of snacks and treats for C that are diabetic-friendly!

20 Carb Snack Packs

I saw the amazing idea, on a fellow D-Mom’s Instagram account (@mama_of_2_t1d_boys) to pre-measure snacks, in a pre-determined amount, and put them in little Ziploc containers, that can easily be grabbed on the go, for our kiddos with T1D.

We have built a snack into C’s morning schedule at school, because he eats lunch later this year and has P.E. and recess before lunch. We found that all that activity, combined with the increased gap in between breakfast and lunch, was causing lows before lunch (even with basal adjustments). So the snack has helped keep his numbers steadier.

I typically send him with a variety of protein/granola bars. His favorites are Quest Bars & LARABAR’s. He still loves those, but has vocalized that he could use a break from the bars. So when I saw this idea on @mama_of_2_t1d_boys account, I knew I had to replicate it! In the past I have also included other pre-packed snacks (in the 15-25 carb range) in his snack box, but I have never done this before. This method is a lot more cost effective too.

Using my food scale, I counted out some of his favorite snacks so that each container equaled exactly 20 carbs. I thought I’d keep it easy with doing all 20 carb snacks, but you could do 5, 10, 15, etc., or a combo of varying carb ranges.

Snow Day Recipes & Activities

5 Kid Approved & Diabetic Friendly Snow Day Snacks- Collage

Even though I am a grown woman, I still look forward to a snow day as much as my kids. As soon as I catch wind that big snow might be coming, I’m heading to the store to stock up on groceries, going through our diabetes supplies and making sure we aren’t running low on anything, and trying to plan some fun activities to do with the kids.

For those of you that are the same as me, I thought I would share some fun snow day recipes and activities to do with the kids. First up…recipes!

These Cheese Stick Snowmen are so easy to make and a nice, fun, low carb snack. I share the instructions on how to make them on t1everydaymagic.com- Cheese Stick Snowmen.

A super fun recipe are these Hot Chocolate Popsicles. Even though it’s a cold treat, my kids really love these! Just another fun way to enjoy hot chocolate.

Another yummy treat is these No-Bake Fudgy Snowballs. Not only do they look fun, but they are also healthy, gluten-free, egg-free, dairy-free, and vegan. And because they are no-bake, they come together super quick!

Snow Ice Cream- 2

Ever made Snow Ice Cream before? We hadn’t until a couple of years ago and the kids absolutely loved it! So fun!

As long as we don’t lose power in the snow storm, I also enjoy baking on snow days. These 4-Ingredient Peanut Butter Cookies, are super easy, delicious and low carb. Get the recipe over at t1everydaymagic.com- 4 Ingredient Peanut Butter Cookies.

Snow Day Collage

Some other things we enjoy doing on a snow day is of course playing out in the snow. If there is enough snow, the kids always want to build a snowman. For the past few years I had a snowman kit I had made myself out of clay, but years of wear and tear has left some of the pieces in not the greatest of shape. I found a cheap snowman kit at Target that we now use. They also sell some snow bricks that can be used to make a snow fort. Snow painting is another favorite. You just add water and some food coloring into plastic squeeze bottles (like what you would put ketchup and mustard in), and have at it.

Indoor Activities

If it’s too cold to go outside and play, there is still lots of fun to be had inside. In past years we’ve enjoyed making forts in the house. The above picture is of my middle son in a fort we made using my Moby Wrap.

My kids also love these pretend snowballs (picture borrowed from Amazon.com) for an indoor snowball fight. My mom got these for them last year, and all 3 of my kids have loved having little snowball fights year round.

Snow Day Books

With 3 kids covering a wide range of ages (almost 10, 7 & 2), it can sometimes be difficult to find activities that aren’t boring to my 9 year old, but not too involved for my 2 year old. Books have been a great way to bridge the gap. I try to sit down with them every night and read together. It’s something they all 3 enjoy, and I certainly enjoy it as well! Nothing better than having my 3 kiddos curled up next to me on the couch and reading a good book to them. Above are some of our favorite snow related books- perfect snow day reads!

Snow Day Experiments

Snow days are also a good time to do some experimenting. My kids love a good experiment. Here are some fun ones we’ve done over the years, or plan to do this year.

New Year’s Eve Snack & Activity Ideas for Kids

2016 is coming to a close and we’re getting ready to ring in 2017! I hope 2016 has been a great year for you and your family, and I hope that 2017 is even better!

To help start the New Year off right, today I wanted to share some fun New Year’s Eve snack and activity ideas with you to do with the kids.

The first is a fun snack idea- a Milk & Cookie New Year’s Toast for Kids. The idea is to have your own little countdown early on in the day (maybe 12 p.m. instead of 12 a.m.) for little ones who can’t make it to midnight. Once 12 hits, you toast to the new year with your glass of milk and then use the remainder of the milk to dunk your cookies in.

To make this more diabetic friendly, for our type 1 kiddos, I used Fairlife milk & Cybele’s Free to Eat Cookies.

Fairlife Milk has 50% less sugar and carbs, and 50% more protein that ordinary milk (yes, even the chocolate!), and it tastes great!

Cybele’s Free to Eat Cookies are full of the flavors you crave, free of the top 8 allergens, certified gluten-free, certified vegan, and you don’t have to be allergic to love them! They come in Chocolate Chip, Snickerdoodle, Oatmeal Raisin & Chocolate Chunk Brownie and all are fantastic!

The next snack I’m sharing is a simple fruit platter spelling out “2017”. My kids gobbled this up in about 5 seconds. Just pick their four favorite fruits, and pre-weigh and count the carbs before assembling on the platter so that they can just dig in. It’s always fun writing the new year the first few times, and I must say writing it in fruit is even more fun!

This time of year there is always a lot of talk about making New Year Resolutions. This doesn’t have to just be for adults, kids can get in on this too!

I know New Year’s Resolutions can be very cliche, but I personally love the idea of setting new intentions for a new year. It feels like a clean slate to make certain areas of your life better than they were in the previous year. As my kids get older, I think this is important for them to do as well- examine things they want to do better, think about something new they want to learn or try in the new year, etc.

I printed off two sheets for them to fill out. One is from theteacherbag.com, and the other is from uncommondesignsonline.com. We had a lot of fun with this activity, and some of their answers surprised me (in a good way). It’s nice to put these “goals” in writing too, because this way we can go back to them and check in and see if we’re making steps towards attaining our goals.

Just a few, fun, and simple things to do with the kiddos to help celebrate the New Year. I sincerely hope 2017 is wonderful for all of you!

Dr. Seuss Strawberry Parfait

In honor of Dr. Seuss’s birthday I made these fun Strawberry Parfaits that resemble The Cat in the Hat’s hat. They come together super quick and are great for breakfast or a snack.

Yield: Makes 4 servings

Dr. Seuss Strawberry Parfait

Ingredients

  • 1/2 cup ricotta cheese
  • 1/8 teaspoon salt
  • 1/4 teaspoon vanilla
  • 1 teaspoon sugar
  • 2 tablespoons strawberry preserves (I use Smucker's Sugar-Free Strawberry Preserves, sweetened with Truvia)
  • 1/2 cup strawberries, diced

Instructions

  1. Mix ricotta cheese, salt, vanilla and sugar together in a small bowl.
  2. Mix strawberry preserves and strawberries together in a separate bowl.
  3. Between 4 shot glasses, evenly distribute ricotta cheese mixture and strawberry mixture, alternating layers to make it look like the stripes in Dr. Seuss's hat.
