Friday Featured Lunch 10.28.16

I pack my son a fresh school lunch every day. Each Friday, I pick one lunch from the week to share with you- the Friday Featured Lunch. These featured lunches are meant to give you inspiration of new things to make and try with your kids. Plus, all featured lunches include the carbohydrate breakdown of each food item, so that you can easily add/remove items to accommodate your child’s likes/dislikes.

Here’s this week’s featured lunch packed in an EasyLunchbox:

Mini Spider Pizzas (spread pizza sauce onto 1 english muffin, top with shredded cheddar cheese, cut olives and position in the shape of a spider, bake at 375F for 8-10 minutes)= 30 carbs *Calculations are for two pizzas, even though only one is pictured.
Fresh Fruit (strawberries, blueberries, kiwi, grapes & mandarin oranges)= 16 carbs
Angie’s Boomchickapop Candy Corn flavored Kettle Corn= 10 carbs
Chobani Yogurt Tube= 7 carbs
Carrots= 3 carbs

Lunch Total= 66 carbohydrates

Toddler Tuesday 10.25.16

In an attempt to cater to those of you who have very young children with type 1 diabetes, I have created a “Toddler Tuesday” series. Each Tuesday, I pick one of my toddler daughter’s meals from the week to share with you- the Toddler Tuesday  Meal. These featured meals are meant to give you inspiration of new things to make and try for those of you with younger kids. Plus, all featured meals include the carbohydrate breakdown of each food item, so that you can easily add/remove items to accommodate your child’s likes/dislikes.

Here’s this week’s Toddler Tuesday meal, assembled in a Planet Box:

Jack O’ Lantern Quesadilla (tortilla cut out with a pumpkin shaped cookie cutter, filled with shredded cheddar cheese and microwaved for 15 seconds)= 9 carbs
Trail Mix (peanuts, raisins, butterschotch chips, chocolate chips & M&M’s)= 6 carbs
High Protein Halloween Dirt Cups (recipe from laurafuentes.com)= 17 carbs
Fresh Fruit (mandarin oranges & grapes)= 11 carbs
Frozen Peas= 2 carbs
Salsa= 3 carbs

Meal Total= 48 carbohydrates

Candy Corn Dessert (pineapple, cantaloupe, topped with Lite Cool Whip=11 carbs
Sun-Maid Strawberry Greek Yogurt Raisins=5 carbs
Chobani Champions Yogurt Tube=9 carbs
Carrot Chips=1 carb
Strawberries=2 carbs
Veggie Straws=5 carbs

Lunch Total= 50 carbohydrates
