Friday Featured Lunch 12.23.16

I pack my son a fresh school lunch every day. Each Friday, I pick one lunch from the week to share with you- the Friday Featured Lunch. These featured lunches are meant to give you inspiration of new things to make and try with your kids. Plus, all featured lunches include the carbohydrate breakdown of each food item, so that you can easily add/remove items to accommodate your child’s likes/dislikes.

Reindeer Corn Dog (Applegate corn dog with broken pretzel twists for antlers, 2 candy eyes, and a dab of ketchup)= 24 carbs
Fresh Fruit (strawberries, raspberries & pomegranate seeds)= 10 carbs
Broccoli & Celery with Ranch (not pictured)= 4 carbs
365 Everyday Value Yogurt Candy Cane Pretzel Flats= 23 carbs

Lunch Total= 61 carbohydrates

Toddler Tuesday 12.20.16

In an attempt to cater to those of you who have very young children with type 1 diabetes, I have created a “Toddler Tuesday” series. Each Tuesday, I pick one of my toddler daughter’s meals from the week to share with you- the Toddler Tuesday  Meal. These featured meals are meant to give you inspiration of new things to make and try for those of you with younger kids. Plus, all featured meals include the carbohydrate breakdown of each food item, so that you can easily add/remove items to accommodate your child’s likes/dislikes.

Here’s this week’s Toddler Tuesday meal, assembled inside an innobaby container:

Christmas Cracker Sandwiches (crackers, and lunch meat and cheese cut out using small Christmas cookie cutters)= 10 carbs
Fresh Fruit (strawberries, raspberries & pomegranate seeds)= 4 carbs
Utz White Cheddar Snowball Cheese Balls= 4 carbs
Frozen Peas= 2 carbs

Meal Total= 20 carbohydrates

Are you all ready for the holidays? Thankfully, I can finally say that I am.

Because I know many of your kiddos will be having their holiday breaks soon, I wanted to compile some holiday treat recipes for you.

5 Kid Approved & Diabetic Friendly Holiday Treats

I love the holiday break. I love the holidays first and foremost, but I also love having both kids home for a couple of weeks. Plus, the weather usually forces us to stay indoors, which I really enjoy on occassion. Being stuck indoors with my family and just being lazy is a welcome treat after the hustle and bustle of the holidays.

So if you too find yourself with more downtime in the next couples of weeks, try out some of these recipes with the kids. I hopefully have included something that all palates could enjoy!

Mint Chocolate Chip Cookies

Mint Chocolate Chip Cookies

Yield: Makes approximately 22 cookies

Serving Size: 1 cookie

Ingredients

  • 1 1/4 cups flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup (1 stick) butter, softened
  • 1/4 cup + 2 Tablespoons Truvia® Baking Blend
  • 1/2 teaspoon vanilla
  • 1 large egg
  • 1 cup mint chocolate chips

Instructions

  1. Preheat oven to 375° F.
  2. Line two baking sheets with parchment paper; set aside.
  3. In a small bowl add flour, salt and baking soda; mix until combined. Set aside.
  4. In a large mixing bowl, beat butter, Truvía® Baking Blend and vanilla, until light and fluffy. Beat in the egg. Gradually beat in the flour mixture. Stir in chocolate chips.
  5. Drop rounded tablespoon on cookie sheets and press down to slightly flatten.
  6. Bake for 9 to 11 minutes or until lightly browned.

Notes

Each serving (1 cookie) has approximately 8.1g of carbs and 0g of dietary fiber. Total NET CARBS= 8.1g.

Cheese Stick Snowman

Ingredients

  • Cheese sticks
  • Permanent markers
  • Black construction or foam paper
  • Ribbon for scarf

Instructions

  1. Take permanent markers and mark the body and face as shown.
  2. Add a paper or foam hat with tape and a ribbon scarf.
  3. Add it to a chilly lunchbox for your child to find at lunch time.

No-Bake Fudgy Snowballs

No-Bake Fudgy Snowballs

Yield: Makes 15 snowballs

Serving Size: 1 snowball

No-Bake Fudgy Snowballs

Ingredients

  • 15 pitted dates
  • 2/3 cup unsweetened cocoa powder
  • 1 cup whole roasted unsalted almonds
  • 1 Tablespoon honey
  • 2 Tablespoons water (or more if needed)
  • 2 Tablespoons confectioner's sugar

Instructions

  1. Add almonds to your food processor and pulse until ground.
  2. Add dates, cocoa powder, honey, and water. Mix until it forms a sticky mass. If it seems too dry, add a little water, 1 tsp at a time.
  3. Wash hands and using damp hands (keep sink running) measure 1 tbsp and roll into a ball with the dough. Set balls on parchment paper.
  4. Put confectioner's sugar in a bowl. Roll balls in your hand and then roll in sugar.
  5. Can be stored in the fridge for up to a week.

Notes

Each serving (1 snowball) has approximately 13.4g of carbs and 3.6g of dietary fiber. Total NET CARBS= 9.8g.
