Friday Featured Lunch- Cheese Folios Wrap

I pack my son a fresh school lunch every day. Each Friday, I pick one lunch from the week to share with you- the Friday Featured Lunch. Sometimes these lunches are a lunch I’ve packed for him during the week, and sometimes it’s just a lunch I have made for myself, experimenting with new recipes. These featured lunches are meant to give you inspiration of new things to make and try with your kids. Plus, all featured lunches include the carbohydrate breakdown of each food item, so that you can easily add/remove items to accommodate your child’s likes/dislikes.

Here’s this week’s featured lunch packed in an EasyLunchbox:

Cheese Folios Wrap (Parmesan cheese folio sheet, deli ham, American cheese slice, diced tomatoes, shredded lettuce, avocado slices & light Ranch dressing)= 4 carbs

Fresh Fruit (orange slices, blueberries, raspberries, blackberries, strawberries & grapes)= 16 carbs

Fresh Veggies (carrots, tomatoes & green pepper slices)= 4 carbs

Veggie Straws= 4 carbs

Toddler Tuesday- Rainbow Pasta Salad

In an attempt to cater to those of you who have very young children with type 1 diabetes, I have created a “Toddler Tuesday” series. Each Tuesday, I pick one of my toddler daughter’s meals from the week to share with you- the Toddler Tuesday Meal. These featured meals are meant to give you inspiration of new things to make and try for those of you with younger kids. Plus, all featured meals include the carbohydrate breakdown of each food item, so that you can easily add/remove items to accommodate your child’s likes/dislikes.

Here’s this week’s Toddler Tuesday meal, assembled inside an innobaby container:

Rainbow Pasta Salad (all natural, no food coloring, rainbow farfalline pasta with olive oil, grape tomatoes, Parmesan cheese, fresh basil, and salt & pepper)= 10 carbs

Fresh Fruit (strawberries, blueberries, blackberries, raspberries, grapes & mandarin oranges)= 3 carbs

Garlic Asiago Brazi Bites= 5 carbs

Green Pepper Slices with Ranch Dressing= 1 carb

1/2 Hard-Boiled Egg= 0.5 carbs

Meal Total=19.5 carbs

Watermelon Slushie

Watermelon Slushie

It’s been beastly hot here the past couple of weeks. Thankfully, this week is a bit cooler for us. I’ve been trying to keep the fridge and freezer stocked with cool treats to help us beat the summer heat. A friend shared on her Instagram page a quick recipe idea for a watermelon slushie, consisting of frozen watermelon chunks, lemonade, and a little ice, all blended up. It looked amazing, so I decided to give it a try using Leaf & Love Organic Lemonade, making it also a low carb treat for C. I made enough for the whole family, and everyone asked for seconds. It was a major hit, and is so easy- the perfect treat for a hot summer day!

Instructions

  1. Freeze watermelon chunks for a few hours.
  2. Add frozen watermelon, lemonade, and ice cubes to a blender, and blend until smooth.

Sleek Treat Monthly Subscription Box Review #2

A couple of months ago, I shared our review of our first Sleek Treat box (you can see that here). For those that missed that post, Sleek Treat is a monthly subscription service, that sends you a box each month with 5-8 handpicked sugar-free gourmet treats to satisfy your sweet cravings.

When you sign up for Sleek Treat, every month you will receive a box of sugar-free hand-curated confections that they have scoured the world for. They even taste-test products to make sure you love your box! I think this is especially important, because believe me, we have tried many products over the years that are diabetic-friendly, but that does not mean they all taste good. Having someone else do the sampling for you is so nice, because then you are not wasting your money on products you don’t enjoy.

Inside each Sleek Treat box, you can expect a mixture of sugar-free chocolates, cookies, hard candies, jellies & more unique finds. Every box will have new and exciting flavors and will always feature a variety of snacks.

Each box also includes an insert detailing nutritional information, and additional information about each product.

C has really come to enjoy getting his box, and can’t wait to discover what goodies it will contain! Here is what was inside our second box:

La Nouba Belgian Sugarless Treats Marshmallows- The marshmallows are pink and white (but taste like vanilla) and have a soft, smooth texture. They are all-natural, low carb, fat free, sugar-free, and do not contain additives, preservatives, or waxes. To be very honest, I thought these were too good to be true, but C said they were really good and tasted just like a normal marshmallow!

Lily’s 70% Extra Dark Chocolate Bar- This chocolate bar is vegan, Non-GMO, gluten-free, sugar-free (stevia sweetened), and has 25% fewer calories than other 70% cocoa dark chocolate. As I have mentioned before, C is more of a milk chocolate guy- dark chocolate isn’t his favorite. In general though, he really enjoys Lily’s chocolate and he said that this had the same great creamy texture you can expect from Lily’s chocolate. He just prefers milk chocolate. However, if you enjoy dark chocolate, I’m sure you would enjoy this!

Purelove Caramel Coconut Cream Cups These Caramel Coconut Cream Cups are Non-GMO, organic, gluten-free, contain 0 grams of sugar, are sugar alcohol free, and soy free. They are sweetened with stevia. The cups have a 70% dark chocolate exterior and a contrasting sweet coconut-flavored filling. To be real honest C wasn’t a huge fan of these. He likes coconut, but these were a bit too coconut-y, in his opinion. I had to agree. They weren’t terrible by any means, just not our favorite item from the box.

Doctor’s CarbRite Diet Raspberry Chocolate Truffle Bar- If you have followed my blog long, it is no secret that C loves a good protein bar. This bar was no different. These bars do have a different texture than some protein bars, which some might mind, but C didn’t seem to. He also was surprised to learn it was raspberry flavored, as he said it didn’t taste very much like raspberry. The bar is gluten-free, high in protein, under 200 calories, has 2 grams net impact carbs, and contains no artificial sweeteners, no trans fat, and no preservatives.

Pandora’s Pops- These pops are vegan, gluten-free, organic, GMO-Free, soy free, nut free, and sugar-free. Pandora Pops are handcrafted in California by holistic health artisans. These pops have only 6 ingredients- essential oils being 2 of them. C enjoyed this pop a lot and laughed at how long it took him to finish it. It felt like he was sucking on it for an hour.

GoLightly Sugar Free Hard Candy Tropical Fruit Mix- These little candies were probably C’s favorite thing from the box. He would have eaten them all in one sitting had I let him. They are sugar-free and come in great flavors like peach mango, strawberry kiwi, passion fruit and pina colada.

To summarize, we were yet again super pleased with the contents of our box! As we were with our first box, we were exposed to many new products we hadn’t heard of previously, and it is so great to have a growing arsenal of snacks and treats for C that are diabetic-friendly!

Santa Fe Bean & Barley Salad

Ingredients

  • 1/2 cup quick pearled barley, uncooked
  • 2 Roma tomatoes, diced
  • 1/2 red bell pepper, diced
  • 1/4 white onion, finely diced
  • 1/4 cup fresh cilantro. finely chopped
  • 1 teaspoon garlic salt
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 15 ounce can corn, drained and rinsed
  • 15 ounce can black beans, drained and rinsed
  • Juice & zest of 1/2 lime

Instructions

  1. Cook barley according to package instructions.
  2. In a large bowl combine diced tomatoes, red bell pepper, onions, cilantro, garlic salt, cumin and chili powder.
  3. Add black beans and corn to the mixture, and mix.
  4. Toss mixture with cooked barley.
  5. Add lime juice and zest, and mix thoroughly.
  6. Season with salt & pepper, if desired.
  7. Keep refrigerated for up to 5 days.
