Toddler Tuesday- Macaroni & Cheese Cups

In an attempt to cater to those of you who have very young children with type 1 diabetes, I have created a “Toddler Tuesday” series. Each Tuesday, I pick one of my toddler daughter’s meals from the week to share with you- the Toddler Tuesday  Meal. These featured meals are meant to give you inspiration of new things to make and try for those of you with younger kids. Plus, all featured meals include the carbohydrate breakdown of each food item, so that you can easily add/remove items to accommodate your child’s likes/dislikes.

Macaroni & Cheese Cups (made with Annie’s Homegrown Organic Macaroni & Cheese)=  13 carbs
Sweet Potato & Chicken Sausage Hash= 6 carbs
Banana Slices= 5 carbs
Veggie Straws= 3 carbs
Peas= 2 carbs

Meal Total= 29 carbohydrates

Nearly a year ago, in an attempt to cater to those of you who have very young children with type 1 diabetes, I created a “Toddler Tuesday” series. Although my toddler daughter is not diabetic, each Tuesday, I pick one of her meals from the week to share with you- the Toddler Tuesday  Meal. These featured meals are meant to give you inspiration of new things to make and try for those of you with younger kids. Plus, all featured meals include the carbohydrate breakdown of each food item, so that you can easily add/remove items to accommodate your child’s likes/dislikes. Turkey Rolls with Pretzel Sticks (roll slices of turkey, cut in half, snap a pretzel stick in half and thread through the middle of the turkey roll)= 3 carbs
Fruity Cottage Cheese Salad (cottage cheese, diced apple, diced pineapple, diced dried apricots mixed together)= 10 carbs *Recipe from Weelicious Lunches cookbook by Catherine McCord
Fresh Fruit (green grapes & pomegranate seeds)= 5 carbs
Olives, Pickle & Feta Cheese= 1 carb
Cooked Carrots= 1 carb

Frozen Peas= 2 carbs

Cranberry, Cinnamon & Goat Cheese Sushi ( 1 slice of bread thinned out, spread with cranberry cinnamon goat cheese, rolled up, and cut into small rolls)= 14 carbs *Flavored goat cheese logs, such as what I used for these sushi rolls, can be found at Trader Joe’s, etc.
Angie’s Boomchickapop​ Frosted Sugar Cookie Kettle Corn Popcorn= 4 carbs
Yellow Tomatoes, Cucumber Sticks & Ranch= 3 carbs
Fresh Fruit (strawberries, blueberries, blackberries & raspberries)= 4 carbs
Cheese Slice= 0 carbs

Meal Total= 25 carbohydrates
