Friday Featured Lunch 2.5.16


It was a chaotic week with snow days, etc., so I did not get a picture of the boys’ lunch, so for this week’s Friday Featured Lunch I’m sharing a gorgeous Harvest Cobb Salad I made for myself. It is romaine lettuce topped with diced pears, dried cranberries, diced apple, chopped bacon, hard-boiled egg chunks, halved pecans and crumbled goat cheese. I didn’t calculate exact carbs, but I’m guessing, without dressing, the whole salad is likely somewhere between 10-15 carbs.
