Friday Featured Lunch 8.21.15

I pack my son a fresh school lunch every day. Each Friday, I pick one lunch from the week to share with you- the Friday Featured Lunch. These featured lunches are meant to give you inspiration of new things to make and try with your kids. Plus, all featured lunches include the carbohydrate breakdown of each food item, so that you can easily add/remove items to accommodate your child’s likes/dislikes.

Here’s this week’s featured lunch packed in EasyLunchboxes:

*I feel an obligation to disclose that when I was emptying C’s lunch (earlier this week when he had this lunch) I tossed the note card with all of the carb breakdowns. I didn’t realize it until last night so I had to go dumpster dive to retrieve the note card. You are welcome. :)

Mini Waffle Sandwiches with Cream Cheese & Peaches (evenly distribute 2 tablespoons whipped cream cheese onto 8 mini Earth’s Best organic blueberry waffles, and add 1 slice fresh peach (cut in half) per waffle sandwich)= 31 carbs
Fresh Fruit (strawberries, blueberries, raspberries, grapes, cherries)= 18 carbs
Chobani Yogurt Tube= 7 carbs
Pistachios= 8 carbs
Carrots= 4 carbs

Lunch Total= 68 carbohydrates
