Friday Featured Lunch 4.10.15

I pack my son a fresh school lunch every day. Each Friday, I pick one lunch from the week to share with you- the Friday Featured Lunch. These featured lunches are meant to give you inspiration of new things to make and try with your kids. Plus, all featured lunches include the carbohydrate breakdown of each food item, so that you can easily add/remove items to accommodate your child’s likes/dislikes.


I got the opportunity to try out some new lunchbox containers and a lunch bag from Fit & Fresh. We loved them! I love how the ice packs snap right onto the container lid itself and the lunch bags are super cute. We will definitely be using these often!


I should note that my kid’s were on Spring break this week so I used it as an opportunity to try out some new lunch ideas. I try to do this over breaks as I would never want to send something new to school, before it’s gotten the stamp of approval. What I’m sharing today is one of my personal favorite salad combinations. C wasn’t a big fan. However, my other son liked it. You win some you lose some.


So here’s this week’s featured lunch packed in a Fit & Fresh lunchbox:

Spinach Salad (baby spinach, feta cheese, mandarin oranges, walnuts, dried cranberries & raspberry dressing)= 20 carbs
Caramel & Almond Sea Salt KIND Bar= 15 carbs
Greek Gods Yogurt= 16 carbs
Strawberries= 1 carb
Blueberries= 1 carb

Lunch Total= 53 carbohydrates
