Friday Featured Lunch 1.23.15

I pack my son a fresh school lunch every day. Each Friday, I pick one lunch from the week to share with you- the Friday Featured Lunch. These featured lunches are meant to give you inspiration of new things to make and try with your kids. Plus, all featured lunches include the carbohydrate breakdown of each food item, so that you can easily add/remove items to accommodate your child’s likes/dislikes.


Here is this week’s featured lunch packed in a LunchBots container:

Sandwich Skewers (1/2 slice bread, 1/2 slice American cheese, 2 slices of ham, lettuce, 2 grape tomatoes, 1/2 hard-boiled egg, 2 avocado chunks, threaded onto 2 popsicle sticks)= 7 carbs
The Good Bean Sweet Cinnamon Chickpeas= 18 carbs
Stonyfield YoKids Yogurt Tube= 11 carbs
Strawberries= 3 carbs
Blueberries= 3 carbs
Raspberries= 1 carb
Kiwi= 4 carbs

Lunch Total= 47 carbohydrates

Sandwich Skewers

Yield: Makes 2


  • 1/2 slice bread, cut in half
  • 1/2 slice American cheese, cut in half
  • 2 slices ham, folded
  • Lettuce leaves
  • 2 grape tomatoes
  • 1/2 hard-boiled egg, cut in half
  • 2 avocado chunks


  1. Alternate threading all ingredients onto a popsicle stick.
