Apple Sandwiches

These apple sandwiches are so delicious, your kids will think they’re getting to indulge in a treat, when in reality they are not only delicious but nutritious as well!

I first came across the idea to make apple sandwiches a couple of years ago. Both of my boys loved it, and they now make it in our regular rotation.

All you need is an apple, peanut butter or almond butter, and your choice of filling (chocolate chips, raisins and/or granola).

Core your apple, using an apple corer, or by simply using a knife to carve out the core.

Slice the apple into 4 rings. For some added fun, use cookie cutters to cut out shapes from the middle.

Spread one side of 2 of the apple slices with peanut or almond butter then sprinkle with chocolate chips, raisins and/or granola. Top with remaining apple slices, pressing down gently to make the sandwiches.

These are also great to pack for a school lunch.

If you aren’t going to be eating the apple sandwiches immediately, start by brushing the apple slices with lemon juice to keep them from turning brown. Click here for a great post on tips to keep apples from browning.

Yield: Makes 2 sandwiches

Ingredients

  • 1 medium apple, cored & cut crosswise
  • 1-2 Tablespoons peanut or almond butter
  • 1 teaspoon lemon juice (optional)
  • Optional Fillings:
  • Mini or regular chocolate chips
  • Granola
  • Raisins

Instructions

  1. You should have 4 apple rings. Spread one side of 2 of the apple slices with peanut or almond butter then sprinkle with chocolate chips, raisins and/or granola.
  2. Top with remaining apple slices, pressing down gently to make the sandwiches.

Notes

Exact carb calculations on this varies, depending on how thick your apple slices are, how much peanut butter you prefer, and which fillings you chose.

To get an exact calculation, I weigh my apple rings (once they have been cored) on my food scale, measure out the peanut butter, and measure the fillings.

Totals will vary, but regardless, it is a great low carb option for lunch or a snack.
